One cold blistery afternoon, my parents wear over at our house helping us cope with the pleasures of owning our own home (i.e. Dad was helping us fix something) and as usual we lost track of time and didn’t have anything prepared to offer them for dinner!! I can be such an awful host at times!!

So I quickly had to come up with something to satisfy the entire family and with food that I had available…it was much too late to go to the store and I can be very lazy!

So Tex Mex Mac’n’Cheese was born! I made it once while GG was over and she called the very next day asking for the recipe and wanting to know when I would be making it next! To me there is no higher compliment than someone asking for one of my recipes!!

One small note- I use my own cheese sauce mixture that I bought at a local grocer. This same recipe can be used with boxed macaroni and cheese.

Tex Mex Mac’n’Cheese
2 cups elbow macaroni
4 tbsp butter
1 cup milk
4 tbsp cheese powder
1lb ground beef or turkey
4 tbsp taco seasoning
1 can Rotel tomatoes

1. Boil macaroni. Drain, then add butter, milk and cheese powder in with the cooked noodles.
2. Brown meat and add taco seasoning.
3. Combine noodles, meat and Rotel tomatoes. Serve and enjoy!!
